After holes in your Windows operating system have been discovered and published, after patches have been made available, black hat hackers and script kiddies write new exploits - viruses, worms, etc - and successfully tear up the Internet with them.
Why?
Because not everyone applies the patches. And when an unpatched system gets infected, your patched system is still at risk because these unpatched systems become bots, also known as zombies, on the Internet that are used to attack your system.
Patching is a must, with one exception: if the patch itself brings with it so much hassle once it has been applied that you're worse off than you are with security hole, don't apply the patch.
